Only in years with very dry autumn and already cold nights is it possible to identify, in the highest crags of the company vineyards, some red grape plants (Nebbiolo, Pignola and Rossola) whose bunches can be destined for "late harvest" and subsequent "long drying" in the fruit room for up to four/five months. These are always small quantities (8-9 hundred/1000 kg) whose specific prerogative must be not only the perfect health/integrity of the berry but also a high acid and aromatic heritage.
